Ingredients

  • 2 cups old-fashioned rolled oats
  • 1 cup raw almonds, chopped
  • 0.5 cup shredded unsweetened coconut
  • 0.5 cup honey
  • 0.25 cup light brown sugar, packed
  • 0.25 cup unsalted butter
  • 1 teaspoon vanilla extract
  • 0.5 teaspoon salt
  • 0.25 cup mini chocolate chips (optional)

Directions

Step 1

Preheat your oven to 350°F (175°C) and line a 9x9-inch baking pan with parchment paper, leaving some overhang for easy removal.

Step 2

In a large mixing bowl, combine the rolled oats, chopped almonds, and shredded coconut. Toss together until evenly mixed.

Step 3

Spread this mixture out evenly on a baking sheet and toast in the preheated oven for 8-10 minutes, stirring halfway through, until lightly golden and fragrant.

Step 4

In a small saucepan over medium heat, combine the honey, light brown sugar, and unsalted butter. Stir until the sugar is dissolved and the mixture is smooth, about 3-4 minutes.

Step 5

Remove the saucepan from heat and stir in the vanilla extract and salt.

Step 6

Transfer the toasted oat mixture back to the large mixing bowl. Pour the honey mixture over the dry ingredients and stir until everything is fully coated.

Step 7

If using mini chocolate chips, allow the mixture to cool slightly, then gently fold in the chocolate chips (so they don't melt completely).

Step 8

Transfer the mixture to the prepared baking pan. Using the back of a spoon, press the mixture firmly and evenly into the pan to ensure the bars hold together well.

Step 9

Bake in the oven at 350°F (175°C) for 15-18 minutes, or until the edges are golden brown.

Step 10

Remove the pan from the oven and allow it to cool completely (about 1-2 hours). For faster cooling, you can place it in the refrigerator for 30 minutes once it's no longer hot.

Step 11

Use the parchment overhang to lift the granola slab out of the pan. Place it on a cutting board and cut into 12 even bars using a sharp knife.

Step 12

Store the granola bars in an airtight container at room temperature for up to one week, or in the refrigerator for up to two weeks.
