Ingredients

  • 1 head cauliflower
  • 1 large red bell pepper
  • 2 medium carrot
  • 1 small red onion
  • 0.5 cup fresh parsley
  • 0.25 cup sliced almonds
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon honey
  • 1 teaspoon Dijon mustard
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

Wash and dry the cauliflower. Cut it into small, bite-sized florets and transfer to a large mixing bowl.

Step 2

Dice the red bell pepper into small pieces and add it to the bowl with the cauliflower.

Step 3

Peel the carrots and either shred them using a grater or cut them into thin matchsticks. Add to the bowl.

Step 4

Finely dice the red onion and add it to the salad mixture.

Step 5

Chop the parsley and scatter it over the vegetables.

Toast the sliced almonds in a dry skillet over medium heat for 2-3 minutes, stirring occasionally until golden. Let them cool and then sprinkle over the salad.
