Ingredients

  • 4 heads Baby bok choy
  • 2 large Carrot
  • 1 medium Red bell pepper
  • 2 stalks Green onions
  • 0.5 cup Cilantro
  • 2 tablespoons Toasted sesame seeds
  • 3 tablespoons Rice vinegar
  • 2 tablespoons Soy sauce
  • 1 tablespoon Honey
  • 2 tablespoons Sesame oil
  • 1 tablespoon Lime juice
  • 1 teaspoon Fresh ginger
  • 0.25 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Thoroughly rinse and dry the bok choy. Slice the bok choy into thin strips, primarily using the leafy green tops and the tender white stems. Discard any tough or bruised portions.

Step 2

Peel the carrots and julienne them into thin matchstick-sized strips. Alternatively, you can use a grater for a finer texture.

Step 3

Thinly slice the red bell pepper into thin strips. Remove the seeds and core prior to slicing.

Step 4

Cut the green onions into thin slices, using both the white and green parts.

Step 5

Roughly chop the cilantro leaves and measure out 1/2 cup.

Step 6

In a small bowl, whisk together the rice vinegar, soy sauce, honey, sesame oil, lime juice, freshly grated ginger, salt, and black pepper to create the dressing.

Step 7

In a large mixing bowl, combine the sliced bok choy, carrots, red bell pepper, green onions, and cilantro.

Step 8

Pour the dressing over the vegetable mixture and toss everything well to evenly coat.

Step 9

Sprinkle the toasted sesame seeds over the slaw and give it one final toss.

Step 10

Let the slaw sit for 5-10 minutes to allow the flavors to meld, then serve immediately for maximum crunch.
