Ingredients

  • 4 cups raw almonds
  • 1 cup white granulated sugar
  • 1 cup brown sugar
  • 2 tablespoons ground cinnamon
  • 0.5 teaspoons salt
  • 2 units egg whites
  • 2 teaspoons vanilla extract
  • 0.25 cup water

Directions

Step 1

In a medium-sized bowl, whisk together the egg whites and vanilla extract until the mixture is frothy.

Step 2

Add the raw almonds to the bowl and stir to coat them evenly with the egg white mixture.

Step 3

In a separate small bowl, mix together the white granulated sugar, brown sugar, ground cinnamon, and salt.

Step 4

Pour the sugar and cinnamon mixture over the almonds and toss until all the almonds are evenly coated.

Step 5

Spray the inside of your Crock Pot with non-stick cooking spray or use a Crock Pot liner for easy cleanup.

Step 6

Transfer the coated almonds to the Crock Pot and spread them out evenly.

Step 7

Set the Crock Pot to low heat and cook the almonds for 3 hours, stirring every 20-30 minutes to prevent sticking or burning.

Step 8

After 2.5 hours of cooking, add the 1/4 cup of water to the Crock Pot. Stir well to help form the crispy coating on the almonds.

Step 9

Once done, carefully transfer the almonds to a baking sheet lined with parchment paper to cool and crisp up.

Step 10

Allow the almonds to cool completely before storing them in an airtight container or enjoying them as a snack!
