Ingredients

  • 4 pieces salmon fillets
  • 1 cup panko breadcrumbs
  • 0.25 cup grated Parmesan cheese
  • 2 tablespoons fresh parsley, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons unsalted butter, melted
  • 2 tablespoons olive oil
  • 0.5 teaspoons salt
  • 0.25 teaspoons black pepper
  • 2 tablespoons fresh lemon juice
  • 0.25 cup mayonnaise
  • 1 tablespoon capers, rinsed and chopped
  • 1 teaspoon lemon zest

Directions

Step 1

Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it with oil.

Step 2

In a medium bowl, combine the panko breadcrumbs, grated Parmesan cheese, chopped parsley, minced garlic, melted butter, olive oil, salt, and black pepper. Mix until well combined.

Step 3

Place the salmon fillets skin-side down on the prepared baking sheet. Pat the breadcrumb mixture evenly over the tops of the salmon fillets, pressing gently to ensure it adheres.

Step 4

Bake the salmon in the preheated oven for 15-20 minutes, or until the crust is golden brown and the salmon is cooked through (internal temperature of 145°F or flakes easily with a fork).

Step 5

While the salmon is baking, prepare the lemon caper sauce. In a small bowl, whisk together the fresh lemon juice, mayonnaise, chopped capers, and lemon zest until smooth. Set aside.

Step 6

Once the salmon is cooked, remove it from the oven and let it rest for 2-3 minutes.

Step 7

Serve the crumb-crusted salmon warm with a dollop of lemon caper sauce on the side or drizzled over the top. Garnish with additional fresh parsley and lemon slices if desired.
