  • 4 large Russet potatoes
  • 4 tablespoons Unsalted butter

  • 1 medium Green bell pepper

  • 0.25 teaspoons Ground cinnamon
  • 0.25 teaspoons Ground clove
  • 1 tablespoon Brown sugar
  • 0.5 cup Raisins
  • 1 teaspoon Salt
  • 0.5 teaspoons Black pepper
  • 0.25 cup Vegetable stock
  • 1 cup Breadcrumbs
  • 2 tablespoons Fresh parsley

Directions

Step 1

Peel and chop the potatoes into even-sized chunks. Place them in a large pot, cover with water, and add a pinch of salt. Bring to a boil and cook until the potatoes are tender, about 15-20 minutes.

Step 2

While the potatoes cook, finely dice the onion, celery, and green bell pepper. Mince the garlic cloves.

Step 3

In a large skillet, melt the butter over medium heat. Add the onion, celery, and green bell pepper. Sauté for about 5 minutes until softened.

Add the minced garlic, thyme, cinnamon, clove, and brown sugar to the skillet. Cook for an additional 2 minutes, stirring to combine.
