  • 1 pound Ground beef or turkey
  • 1 medium Yellow onion, finely chopped
  • 2 Garlic cloves, minced

  • 1 cup Green beans, chopped
  • 0.5 cup Frozen peas
  • 2 tablespoons Tomato paste
  • 0.5 cup Beef or chicken broth
  • 1 teaspoon Dried thyme
  • 0.5 teaspoon Paprika
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 4 medium Russet potatoes, peeled and chopped
  • 4 tablespoons Unsalted butter
  • 0.5 cup Milk
  • 1 cup Shredded cheddar cheese
  • 1 tablespoon Olive oil
  • 2 tablespoons Parsley, chopped (optional, for garnish)

Directions

Step 1

Preheat your oven to 375°F (190°C). Lightly grease a 9-inch round casserole dish or baking dish.

Step 2

In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic; saute for 2-3 minutes until softened and fragrant.

Step 3

Add the ground beef (or turkey) to the skillet and cook until browned, breaking it into small pieces as it cooks, about 5-7 minutes. Drain any excess fat.

Stir in the diced carrots, green beans, and peas. Cook for another 3-4 minutes until the vegetables start to soften.

Sprinkle the shredded cheddar cheese on top of the mashed potatoes, covering the surface evenly.

Place the casserole dish in the preheated oven and bake for 20-25 minutes, or until the cheese is melted and bubbly and the edges are golden brown.
