Preheat your oven to 375°F (190°C). Lightly grease a 9-inch round casserole dish or baking dish.
In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic; saute for 2-3 minutes until softened and fragrant.
Add the ground beef (or turkey) to the skillet and cook until browned, breaking it into small pieces as it cooks, about 5-7 minutes. Drain any excess fat.
Stir in the diced carrots, green beans, and peas. Cook for another 3-4 minutes until the vegetables start to soften.
Add the tomato paste, beef or chicken broth, dried thyme, paprika, salt, and pepper. Stir well to combine and let the mixture simmer for 3-5 minutes until slightly thickened. Remove from heat and set aside.
While the meat mixture is cooking, prepare the mashed potatoes. Place the peeled and chopped potatoes in a large pot with salted water and bring to a boil. Cook for 10-12 minutes, or until the potatoes are fork-tender.
Drain the potatoes and return them to the pot. Add the butter and milk, then mash until smooth and creamy. Season with a pinch of salt to taste.
Transfer the cooked meat and vegetable mixture to the prepared casserole dish, spreading it evenly across the bottom.
Spoon the mashed potatoes over the meat mixture, spreading it into an even layer. Use the back of a spoon to create swirls or patterns on the surface if desired.
Sprinkle the shredded cheddar cheese on top of the mashed potatoes, covering the surface evenly.
Place the casserole dish in the preheated oven and bake for 20-25 minutes, or until the cheese is melted and bubbly and the edges are golden brown.
Remove from the oven and allow the casserole to cool for 5 minutes before garnishing with chopped parsley and serving. Enjoy!
