Ingredients

  • 1 Baguette
  • 3 tablespoons Olive oil
  • 2 cups Fava beans (fresh, shelled)
  • 2 Garlic cloves
  • 1 cup Ricotta salata (crumbled or grated)
  • 1 teaspoon Lemon zest
  • 2 tablespoons Mint leaves (chopped)
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper (freshly ground)
  • 0.25 teaspoon Crushed red pepper flakes (optional)

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Slice the baguette into 1/2-inch thick slices. Lay them on a baking sheet.

Step 3

Brush each slice generously with 2 tablespoons of olive oil. Place the sheet in the oven and toast the slices for 8-10 minutes, until golden and crispy. Remove and set aside to cool.

Meanwhile, bring a pot of salted water to a boil. Add the fava beans and blanch for 2-3 minutes. Drain the beans and transfer them to an ice bath to cool completely.

Step 5

Once cooled, peel the tough outer skins from the fava beans, revealing the bright green inner beans. Discard the skins.

In a small pan, heat the remaining 1 tablespoon of olive oil over medium heat. Add the garlic and sauté until fragrant, about 1 minute. Add the peeled fava beans, salt, black pepper, and crushed red pepper flakes (if using). Cook for another 2-3 minutes, smashing the beans slightly with the back of a spoon.

Transfer the fava bean mixture to a bowl and stir in the lemon zest and chopped mint.

To assemble, top each crostini slice with a spoonful of the fava bean mixture, followed by a sprinkle of ricotta salata.
