Ingredients

  • 250 grams All-purpose flour
  • 50 grams Granulated sugar
  • 125 grams Unsalted butter (cold, cubed)
  • 2 large Egg yolks
  • 2 tablespoons Ice water
  • 2 medium Apples (such as Granny Smith or Honeycrisp, peeled, cored, and thinly sliced)
  • 6 medium Fresh figs (quartered)
  • 50 grams Brown sugar
  • 1 teaspoon Ground cinnamon
  • 1 tablespoon Lemon juice
  • 1 teaspoon Vanilla extract
  • 1 large Egg (for egg wash)
  • 1 tablespoon Milk (for egg wash)
  • 1 tablespoon Powdered sugar (for garnish, optional)

Directions

Step 1

In a large mixing bowl, combine the all-purpose flour and granulated sugar.

Step 2

Add the cold, cubed butter to the flour mixture and use a pastry cutter or your fingertips to work the butter into the flour until the mixture resembles coarse crumbs.

Add the egg yolks and ice water to the mixture. Gently knead the dough until it just comes together into a ball. Wrap the dough in plastic wrap and chill in the refrigerator for at least 30 minutes.
