Ingredients

  • 4 pieces Egg roll wrappers
  • 4 slices Thinly sliced deli ham
  • 1/2 cup Reduced-fat shredded Swiss cheese
  • 2 teaspoons Dijon mustard
  • 1 large Egg white
  • 1 as needed Cooking spray

Directions

Step 1

Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper and lightly spray with cooking spray.

Step 2

On a clean, flat surface, lay out one egg roll wrapper with a corner pointing toward you to create a diamond shape.

Step 3

Spread 1/2 teaspoon of Dijon mustard evenly across the center of the wrapper.

Step 4

Lay one slice of deli ham diagonally across the center of the wrapper, and top with 2 tablespoons of reduced-fat shredded Swiss cheese.

Step 5

Fold the bottom corner of the wrapper up and over the filling, tucking it snugly. Fold in the two side corners to seal the ends, and then roll the wrapper tightly to form the egg roll shape.

Step 6

Brush the outer edges of the wrapper with a little egg white to seal it, ensuring there are no gaps. Repeat with the remaining wrappers and filling.

Step 7

Place the egg rolls seam-side down on the prepared baking sheet. Lightly spray the tops of the egg rolls with cooking spray to ensure crisping.

Step 8

Bake in the preheated oven for 8-10 minutes, flipping halfway through, until the wrappers are golden brown and crispy.

Step 9

Allow the egg rolls to cool for a few minutes before serving. Enjoy!
