Ingredients

  • 8 slices White bread (preferably slightly stale)
  • 2 tablespoons Dijon mustard
  • 4 slices Cooked ham
  • 150 grams Gruyère cheese, grated
  • 50 grams Butter
  • 2 tablespoons All-purpose flour
  • 300 milliliters Whole milk
  • 0.25 teaspoons Nutmeg, freshly grated
  • 0.5 teaspoons Salt
  • 0.5 teaspoons Black pepper, freshly ground
  • 30 grams Parmesan cheese, grated

Directions

Step 1

Preheat your oven to 200°C (390°F) and grease a medium-sized baking dish with butter or non-stick spray.

Step 2

Butter one side of each slice of bread and spread the Dijon mustard evenly over the unbuttered side of 4 of the slices.

Step 3

Place one slice of ham on top of the mustard side of each of the 4 slices, then sprinkle about half of the Gruyère cheese on top. Close with the remaining 4 slices of bread, butter-side out, to form sandwiches.

In a medium saucepan, melt the butter over medium heat. Once melted, stir in the flour and cook for 1 minute, whisking constantly, to make a roux.

Gradually pour in the milk, whisking continuously, until the béchamel sauce is smooth and thickened. Remove from heat and stir in the nutmeg, salt, pepper, and remaining Gruyère cheese (about 75 grams).

Cut the sandwiches in half diagonally and arrange the halves snugly in the prepared baking dish.

Pour the béchamel sauce evenly over the sandwiches, ensuring all the bread is covered. Sprinkle the Parmesan cheese on top for extra crispness.
