In a medium-sized saucepan, bring 4 cups of water to a boil. Add 1 teaspoon of salt and slowly stir in the grits. Reduce the heat to low, cover, and simmer for 20-25 minutes, stirring occasionally until thickened.
Remove the grits from heat. Stir in 4 tablespoons of butter and the shredded cheddar cheese. Keep warm.
In a large skillet, cook the diced bacon over medium heat until crispy, about 7-10 minutes. Remove the bacon with a slotted spoon and set aside, leaving the rendered fat in the skillet.
