  • 6 pieces day-old croissants
  • 113 grams unsalted butter
  • 100 grams granulated sugar
  • 2 large eggs
  • 150 grams almond flour
  • 1 teaspoon vanilla extract
  • 0.5 teaspoon almond extract
  • 20 grams all-purpose flour
  • 50 grams sliced almonds
  • 30 grams powdered sugar
  • 120 milliliters water
  • 50 grams sugar (for syrup)
  • 0.5 teaspoon almond extract (for syrup)

Directions

Step 1

Preheat your oven to 180°C (350°F) and line a baking sheet with parchment paper.

To make the frangipane, cream together the unsalted butter and granulated sugar in a large mixing bowl until pale and fluffy.

Add the eggs one at a time, beating well after each addition until fully incorporated.

Mix in the almond flour, vanilla extract, almond extract, and all-purpose flour until smooth and set aside.
