Ingredients

  • 4 pieces pork shanks
  • 32 ounces sauerkraut
  • 1 large onion
  • 4 cloves garlic
  • 1 cup chicken broth
  • 1 large apple
  • 2 medium carrots
  • 1 teaspoon caraway seeds
  • 2 pieces bay leaves
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 tablespoon vegetable oil

Directions

Step 1

Pat dry the pork shanks with paper towels and season with salt, black pepper, and paprika on all sides.

Step 2

Heat the vegetable oil in a large skillet over medium-high heat. Sear the pork shanks for 2-3 minutes per side until browned. Remove and set aside.

Peel and thinly slice the onion. Mince the garlic. Peel and chop the carrots into bite-sized pieces. Core and dice the apple.

In the crockpot, spread half of the sauerkraut at the bottom. Layer the seared pork shanks on top.
