Ingredients

  • 3 lbs beef chuck roast
  • 1 large, diced onion
  • 4 minced garlic cloves
  • 14 oz can crushed tomatoes
  • 1 cup beef broth
  • 2 tbsp balsamic vinegar
  • 2 tsp Italian seasoning
  • 0.5 tsp red pepper flakes
  • 1 tsp salt
  • 1 tsp black pepper
  • 4 medium, cut into chunks carrots
  • 1.5 lbs baby potatoes
  • 2 tbsp olive oil
  • 2 tbsp, chopped (optional, for garnish) fresh parsley

Directions

Step 1

Heat 2 tablespoons of olive oil in a large skillet over medium-high heat.

Step 2

Season the beef chuck roast with salt and black pepper on all sides.

Step 3

Sear the roast in the hot skillet until browned on all sides, about 3-4 minutes per side. Remove from heat.

Step 4

Place the diced onion, minced garlic, carrots, and baby potatoes at the bottom of your crockpot.

Step 5

Place the seared roast on top of the vegetables.
