Ingredients

  • 2 pounds boneless pork loin
  • 3 medium apples (such as Honeycrisp or Granny Smith)
  • 0.25 cup honey
  • 0.5 cup chicken broth
  • 2 tablespoons soy sauce
  • 1 tablespoon Dijon mustard
  • 2 minced garlic cloves
  • 0.5 teaspoon ground cinnamon
  • 0.25 teaspoon ground black pepper
  • 0.5 teaspoon salt
  • 1 tablespoon cornstarch
  • 2 tablespoons water

Directions

Step 1

Peel, core, and slice the apples into thin wedges. Set aside.

Step 2

Season the pork loin on all sides with salt and ground black pepper.

Step 3

In a small bowl, whisk together the honey, chicken broth, soy sauce, Dijon mustard, minced garlic, and ground cinnamon.

Step 4

Place half of the sliced apples in the bottom of the crockpot. Lay the seasoned pork loin on top of the apples.

Step 5

Pour the honey mixture evenly over the pork loin, ensuring it is well coated.

Step 6

Place the remaining apple slices around and on top of the pork loin.

Step 7

Cover the crockpot with a lid and set it to cook on low for 5 hours, or until the pork loin reaches an internal temperature of 145°F (63°C).

Step 8

Once cooked, carefully remove the pork loin from the crockpot and let it rest on a cutting board for 5-10 minutes before slicing.

Step 9

To make a gravy, strain the cooking liquid from the crockpot and pour it into a small saucepan over medium heat.

Step 10

Mix the cornstarch and water together in a small bowl to create a slurry, then slowly whisk it into the saucepan.

Step 11

Simmer the mixture for 3-5 minutes, or until the sauce thickens to your desired consistency.

Step 12

Slice the rested pork loin and serve it with the cooked apples and drizzled gravy.
