Ingredients

  • 4 cups Old-fashioned rolled oats
  • 1 cup Chopped nuts (almonds, walnuts, or pecans)
  • 0.5 cup Shredded unsweetened coconut
  • 0.5 cup Maple syrup or honey
  • 0.25 cup Coconut oil (melted)
  • 2 teaspoons Vanilla extract
  • 1 teaspoon Ground cinnamon
  • 0.25 teaspoons Salt
  • 1 cup Dried fruit (cranberries, raisins, or chopped apricots)
  • 0.5 cup Chocolate chips (optional)

Directions

Step 1

Prepare your slow cooker by lightly greasing the inside with non-stick spray or lining it with parchment paper to prevent the granola from sticking.

Step 2

In a large bowl, combine the rolled oats, chopped nuts, and shredded coconut. Mix well to evenly distribute the ingredients.

Step 3

In a separate small bowl, whisk together the maple syrup (or honey), melted coconut oil, vanilla extract, cinnamon, and salt until fully combined.

Step 4

Pour the wet mixture over the dry oat mixture. Stir well to coat everything evenly.

Step 5

Transfer the granola mixture into the slow cooker. Spread it out in an even layer.

Step 6

Set the slow cooker to low heat and cook the granola uncovered, stirring every 30 minutes to ensure even cooking and to prevent the granola from sticking or burning.

Step 7

Cook for a total of 2 hours, stirring occasionally, until the granola is crisp and golden brown.

Step 8

Once cooked, carefully transfer the granola to a large baking sheet or tray. Allow it to cool completely—it will crisp up further as it cools.

Step 9

Mix in the dried fruit and chocolate chips, if using, once the granola has cooled.

Step 10

Store the granola in an airtight container at room temperature for up to 2 weeks. Enjoy it as a snack, with milk, or as a topping for yogurt!
