Ingredients

  • 30 oz Black beans (canned, rinsed and drained)
  • 15 oz Diced tomatoes (canned, with juices)
  • 1 cup Corn (canned or frozen)
  • 4 cups Vegetable broth
  • 1 medium Yellow onion (diced)
  • 3 cloves Garlic cloves (minced)
  • 1 medium Bell pepper (diced, any color)
  • 1 small Jalapeño (seeded and minced, optional)
  • 2 tsp Ground cumin
  • 2 tsp Chili powder
  • 1 tsp Paprika
  • 1 tsp Oregano (dried)
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 1 piece Bay leaf
  • 2 tbsp Fresh lime juice
  • 0.25 cup Cilantro (chopped, optional for garnish)
  • 1 medium Avocado (sliced, optional for serving)
  • 2 cups Tortilla chips (crushed, for serving)
  • 0.5 cup Shredded cheese (optional for serving)
  • 0.25 cup Sour cream (optional for serving)

Directions

Step 1

Rinse and drain the black beans if using canned.

Step 2

In a slow cooker, combine the black beans, diced tomatoes with their juices, corn, vegetable broth, diced onion, minced garlic, bell pepper, and optional jalapeño.
