  • 1 large Yellow onion
  • 4 medium Carrots
  • 3 Celery stalks

  • 4 cups Beef broth
  • 2 tablespoons Worcestershire sauce
  • 4 sprigs Fresh thyme
  • 2 Bay leaves
  • 1.5 teaspoons Salt
  • 1 teaspoon Black pepper
  • 2 tablespoons Olive oil
  • 0.25 cup All-purpose flour
  • 1 cup Frozen peas
  • 2 tablespoons Chopped parsley (optional, for garnish)

Directions

Step 1

Cut the beef stew meat into bite-sized chunks if not pre-cut. Season the meat with 1 teaspoon of salt and 1 teaspoon of black pepper.

Step 2

Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Sear the beef cubes in batches until browned on all sides, about 2-3 minutes per batch. Transfer the browned beef to the crockpot.

Step 3

Peel and dice the onion, carrots, and potatoes into bite-sized pieces. Slice the celery. Mince the garlic cloves.

Step 4

Add the diced onion, carrots, celery, and potatoes to the crockpot, layering them over the beef.

In the same skillet used for browning the beef, add 3 tablespoons of tomato paste and cook for 1 minute to intensify its flavor. Deglaze the skillet with 1 cup of beef broth, scraping up any browned bits from the bottom, then pour the mixture into the crockpot.

Add the remaining 3 cups of beef broth, 2 tablespoons of Worcestershire sauce, 4 sprigs of fresh thyme, and 2 bay leaves to the crockpot. Sprinkle in an additional 0.5 teaspoon of salt.

Cover the crockpot with the lid and cook on LOW for 8-9 hours or HIGH for 4-5 hours, until the beef is tender and the vegetables are soft.

About 30 minutes before the cooking time is finished, mix 0.25 cup of all-purpose flour with 0.5 cup of water to create a slurry. Stir the slurry into the stew to thicken the broth.

Add the frozen peas to the crockpot and stir them in. Continue cooking for the remaining 30 minutes.

Once done, remove the thyme sprigs and bay leaves. Taste and adjust seasoning with additional salt and pepper if needed.
