  • 2 pieces Boneless, skinless chicken breasts
  • 2 cups Carrots, diced

  • 1 medium-sized Yellow onion, diced
  • 4 cloves Garlic, minced
  • 6 cups Chicken broth
  • 1 tablespoon Fresh thyme, finely chopped
  • 1 teaspoon Dried oregano
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 cups Egg noodles
  • 0.5 cup Heavy cream (optional, for added richness)
  • 2 tablespoons Chopped parsley (for garnish)

Directions

Step 1

Place the chicken breasts at the bottom of your slow cooker.

Step 2

Add the diced carrots, celery, onion, and minced garlic on top of the chicken.

Step 3

Pour in the chicken broth and stir in the thyme, oregano, salt, and black pepper.

Cover the slow cooker and cook on LOW for 5-6 hours or HIGH for 3-4 hours, until the chicken is tender and easily shreds apart.
