  • 6 pieces Boneless, skinless chicken thighs
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 tablespoons Olive oil
  • 1 large Yellow onion, diced
  • 4 cloves Garlic cloves, minced
  • 3 medium Carrots, peeled and chopped
  • 2 stalks Celery stalks, chopped
  • 3 medium Potatoes, diced
  • 1 cup Dry white wine
  • 3 cups Chicken broth
  • 2 tablespoons Tomato paste
  • 1 teaspoon Dried thyme
  • 1 teaspoon Dried rosemary
  • 1 leaf Bay leaf
  • 2 tablespoons Fresh parsley, chopped

Directions

Step 1

Season the chicken thighs with salt and black pepper on both sides.

Step 2

In a large skillet, heat olive oil over medium-high heat. Sear the chicken thighs for about 2-3 minutes on each side until golden brown. Transfer the chicken to the crock pot.

In the same skillet, sauté the diced yellow onion and minced garlic for 2-3 minutes until fragrant and translucent.
