Ingredients

  • 4 pounds Whole chicken
  • 2 teaspoons Salt
  • 1 teaspoon Black pepper
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • 1 teaspoon Paprika
  • 1 teaspoon Dried thyme
  • 1 teaspoon Dried rosemary
  • 2 whole Lemons
  • 5 whole Garlic cloves
  • 1 medium Yellow onion
  • 2 tablespoons Fresh parsley
  • 2 tablespoons Olive oil
  • 1 cup Chicken broth

Directions

Step 1

Remove the giblets from the cavity of the whole chicken and pat the chicken dry using paper towels.

Step 2

In a small bowl, mix together salt, black pepper, garlic powder, onion powder, paprika, dried thyme, and dried rosemary.

Step 3

Rub the seasoning mixture all over the chicken, including inside the cavity, ensuring it is fully coated.

Step 4

Stuff the cavity of the chicken with one lemon (quartered), three garlic cloves, and half of the yellow onion (quartered).

Slice the second lemon and layer the bottom of the crock pot along with the remaining onion and garlic cloves to form a base for the chicken.
