Ingredients

  • 1 pound Dried white beans (such as Great Northern or Navy beans)
  • 6 cups Vegetable broth or chicken broth
  • 1 large Yellow onion, diced
  • 4 cloves Garlic, minced
  • 2 tablespoons Olive oil
  • 1 leaf Bay leaf
  • 3 sprigs Fresh thyme (or 1 teaspoon dried)
  • 1 teaspoon Salt
  • 0.5 teaspoons Black pepper
  • 1 medium Carrot, diced (optional for additional flavor)
  • 1 stalk Celery, diced (optional for additional flavor)

Directions

Step 1

Rinse the dried white beans thoroughly under cold water and remove any debris or broken beans.

Step 2

Place the beans in a large bowl and cover them with water. Soak them overnight (8-12 hours). Drain and rinse the beans thoroughly before cooking.

Step 3

In a skillet, heat olive oil over medium heat. Add the diced onion and sauté for 3-4 minutes until softened, then add the minced garlic and sauté for an additional 30 seconds until fragrant.

Step 4

Transfer the soaked beans to the crock pot. Add the sautéed onion and garlic, diced carrot and celery (if using), broth, bay leaf, thyme, salt, and black pepper.

Step 5

Cover the crock pot with the lid, set it to low heat, and cook for 8 hours, or until the beans are tender and creamy.

Step 6

Adjust seasoning to taste, adding more salt and pepper if needed.

Step 7

Remove the bay leaf and thyme sprigs before serving.

Step 8

Serve warm as a side dish or enjoy as a main course with crusty bread or rice. Store leftovers in an airtight container in the refrigerator for up to 5 days.
