  • 2 pounds venison loin
  • 1 large yellow onion
  • 3 medium carrots
  • 3 medium russet potatoes
  • 4 whole garlic cloves
  • 2 cups beef broth
  • 2 tablespoons olive oil
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper

Directions

Step 1

Trim any excess fat or silver skin from the venison loin, if needed, and pat it dry with paper towels.

Step 2

Season the venison loin on all sides with salt, black pepper, paprika, dried thyme, and dried rosemary.

Step 3

Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Sear the venison loin for 2-3 minutes on each side until browned. Remove from the skillet and set aside.
