  • 28 ounces canned diced tomatoes (with juices)
  • 6 cups vegetable broth
  • 15 ounces canned kidney beans, drained and rinsed
  • 15 ounces canned cannellini beans, drained and rinsed
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 bay leaf
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper
  • 1 cup small pasta (like macaroni or ditalini)
  • 2 cups fresh spinach or kale, chopped
  • 2 tablespoons fresh parsley, chopped
  • 0 grated Parmesan cheese (optional)

Directions

Step 1

In a large skillet, heat olive oil over medium heat. Add the diced onion, carrots, and celery and sauté for 5 minutes until softened.

Stir in the garlic and cook for 1 more minute until fragrant.
