  • 1 cup green beans, trimmed and cut into 1-inch pieces
  • 28 ounces canned diced tomatoes, with juices
  • 6 cups vegetable broth
  • 1 cup frozen peas
  • 1 cup frozen corn kernels
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 leaf bay leaf
  • 2 teaspoons salt
  • 1 teaspoon ground black pepper
  • 2 tablespoons fresh parsley, chopped

Directions

Step 1

Heat the olive oil in a skillet over medium heat. Add the chopped onion, carrots, and celery. Sauté for 5-7 minutes, or until the vegetables begin to soften.
