Ingredients

  • 2 pounds Beef stew meat (cut into 1-inch cubes)

  • 3 cloves Garlic (minced)
  • 3 large Carrots (peeled and sliced into 1/2-inch rounds)
  • 2 stalks Celery (sliced)
  • 3 medium Russet potatoes (peeled and cut into 1-inch cubes)
  • 1 cup Frozen peas
  • 2 tablespoons Tomato paste
  • 1 14 oz can Crushed tomatoes
  • 4 cups Beef broth
  • 2 tablespoons Parsley (chopped, for garnish)
  • 2 pieces Bay leaves
  • 1 teaspoon Dried thyme
  • 1 teaspoon Paprika

Directions

Step 1

Season the beef stew meat with 1 teaspoon of salt and 1/2 teaspoon of black pepper.

Step 2

Heat the olive oil in a large skillet over medium-high heat. Sear the beef in batches to brown all sides, about 2-3 minutes per side. Transfer the seared beef to the Crock Pot.

Step 3

In the same skillet, sauté the diced onion and minced garlic until fragrant and softened, about 2-3 minutes. Add to the Crock Pot.
