  • 6 cups vegetable stock
  • 3 medium potatoes, diced (Yukon Gold or Russet)
  • 2 teaspoons Italian seasoning
  • 1.5 teaspoons salt
  • 0.5 teaspoons black pepper
  • 1 loaf crusty bread (for serving, optional)
  • 0.5 cup Parmesan cheese, grated (for garnish, optional)

Directions

Step 1
