Ingredients

  • 1 pound Ground turkey
  • 1 medium Yellow onion, diced
  • 3 cloves Garlic, minced
  • 8 ounces Cremini or white mushrooms, sliced
  • 2 cups Beef broth
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon Dijon mustard
  • 1 teaspoon Paprika
  • 1 teaspoon Salt
  • 0.5 teaspoons Black pepper
  • 2 tablespoons Cornstarch
  • 2 tablespoons Water
  • 1 cup Sour cream
  • 12 ounces Egg noodles
  • 2 tablespoons Chopped parsley, for garnish (optional)

Directions

Step 1

In a skillet over medium heat, cook the ground turkey until no longer pink, breaking it into small pieces as it cooks. Drain any excess grease and transfer the turkey to the crock pot.

Step 2

Add the diced onion, minced garlic, and sliced mushrooms to the crock pot.

Step 3

Pour in the beef broth and stir in Worcestershire sauce, Dijon mustard, paprika, salt, and black pepper.

Step 4

Cover and cook on low for 4-5 hours or on high for 2-3 hours, until the onions and mushrooms are tender, and the flavors are well combined.

Step 5

In a small bowl, whisk together the cornstarch and water to create a slurry. Add the slurry to the crock pot, stirring to combine. Let the stroganoff cook for an additional 15-20 minutes on high to thicken the sauce.

Step 6

Stir in the sour cream until fully incorporated, making the sauce rich and creamy.

Step 7

Meanwhile, cook the egg noodles according to the package instructions. Drain and set aside.

Step 8

Serve the turkey stroganoff over the cooked egg noodles and garnish with chopped parsley, if desired. Enjoy!
