Ingredients

  • 1.5 cups long-grain white rice
  • 3 cups vegetable broth
  • 2 cans diced tomatoes
  • 1 medium, chopped onion
  • 3 minced garlic cloves
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 cup shredded cheddar cheese
  • 2 tablespoons, chopped (optional) parsley

Directions

Step 1

Rinse the rice under cold water until the water runs clear. Drain and set aside.

In a skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for 3-4 minutes until softened. Add the minced garlic and sauté for another minute until fragrant.
