  • 1 cup Frozen corn kernels
  • 2 tbsp Canned chipotle peppers in adobo sauce (chopped)
  • 1 cup Chicken broth
  • 1.5 tsp Chili powder
  • 1 tsp Cumin
  • 1 tsp Smoked paprika
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 2 tbsp Fresh cilantro (chopped, optional for garnish)
  • 4 pieces Lime wedges (optional for serving)

Directions

Step 1

Heat olive oil in a skillet over medium heat. Sear both sides of the turkey breast until lightly browned, about 3-4 minutes per side. Transfer the turkey to the crock pot.

Step 2

In the same skillet, sauté the chopped onion until softened, about 3 minutes. Add minced garlic and cook for an additional minute. Transfer the mixture to the crock pot.
