Start by preparing the beef chuck roast. Trim off any excess fat and cut the beef into large chunks (about 2 inches thick).
In a medium bowl, whisk together the coconut milk, peanut butter, soy sauce, brown sugar, red curry paste, minced garlic, grated ginger, lime juice, fish sauce, and red chili flakes (if using). Stir until the peanut butter is fully incorporated and the mixture is smooth.
