  • 2 lbs Beef stew meat
  • 1 tbsp Olive oil
  • 1 medium Yellow onion, diced
  • 3 Garlic cloves, minced
  • 14.5 oz Diced tomatoes (canned)
  • 4 cups Beef broth
  • 3 medium Russet potatoes, cubed
  • 3 medium Carrots, sliced
  • 15 oz Black beans (canned), drained and rinsed
  • 2 tbsp Taco seasoning
  • 2 tbsp Tomato paste
  • 1.5 cups Corn kernels (frozen or canned, drained)
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 0.25 cup Fresh cilantro, chopped (optional for garnish)

Directions

Step 1

Heat the olive oil in a large skillet over medium-high heat. Add the beef stew meat and sear for 2–3 minutes on each side until browned. Transfer the seared meat to a crock pot.

Step 2

In the same skillet, add the diced onion and cook for 3–4 minutes until softened. Add the minced garlic and sauté for an additional 1 minute. Transfer the onions and garlic to the crock pot.

Step 3

Add the diced tomatoes, beef broth, cubed potatoes, sliced carrots, black beans, taco seasoning, and tomato paste to the crock pot. Stir to combine.

Step 4
