Ingredients

  • 32 ounces frozen meatballs
  • 20 ounces pineapple chunks (with juice)
  • 0.5 cups brown sugar
  • 0.33 cups white vinegar
  • 0.25 cups soy sauce
  • 0.5 cups ketchup
  • 2 tablespoons cornstarch
  • 2 tablespoons water
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 onion, diced

Directions

Step 1

Place the frozen meatballs in the bottom of your crock pot.

Step 2

In a medium mixing bowl, combine the pineapple chunks (with their juice), brown sugar, white vinegar, soy sauce, and ketchup. Stir until the brown sugar is dissolved and the sauce is well mixed.

Step 3

Pour the sauce mixture over the meatballs in the crock pot, ensuring the meatballs are evenly coated.

Step 4

Add the diced red bell pepper, green bell pepper, and onion on top of the meatballs.

Step 5

Cover the crock pot with the lid and cook on low heat for 4 hours, or until the meatballs are heated through and tender.

Step 6

In a small bowl, whisk together the cornstarch and water to create a slurry.

Step 7

About 15 minutes before serving, add the cornstarch slurry to the crock pot and gently stir to combine. This will thicken the sauce.

Step 8

Cover and continue cooking for 15 minutes, or until the sauce has thickened.

Step 9

Serve the sweet and sour meatballs over steamed white rice or noodles, and enjoy!
