Ingredients

  • 3 lbs pork roast (boneless pork loin or shoulder)
  • 3 medium sweet potatoes, peeled and cubed
  • 3 medium apples, peeled, cored, and sliced
  • 1 medium yellow onion, sliced
  • 1 cup chicken broth
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons honey
  • 3 cloves garlic, minced
  • 1 teaspoon ground cinnamon
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 tablespoon olive oil

Directions

Step 1

Heat a large skillet over medium-high heat. Add olive oil.

Season the pork roast generously with salt and pepper on all sides.

Sear the pork roast in the hot skillet for about 2-3 minutes per side until browned all over. Remove from heat.
