Ingredients

  • 4 pieces Bone-in or boneless pork chops
  • 0.25 cups Brown sugar
  • 0.5 cups Ketchup
  • 0.25 cups Soy sauce
  • 0.25 cups White vinegar
  • 1 cups Pineapple chunks (canned, with juice)
  • 1 cups Bell peppers (red, green, or yellow), chopped
  • 2 cloves Garlic cloves, minced
  • 1 tablespoons Cornstarch
  • 2 tablespoons Cold water
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Black pepper
  • 4 cups Cooked white or brown rice (optional, for serving)

Directions

Step 1

Season the pork chops with salt and pepper on both sides.

Step 2

In a medium mixing bowl, whisk together the brown sugar, ketchup, soy sauce, white vinegar, and pineapple juice from the canned pineapple chunks. Set the pineapple chunks aside for later.

Step 3

Place the pork chops in the bottom of the crock pot.

Step 4

Sprinkle the minced garlic over the pork chops, then layer the bell peppers and pineapple chunks on top.

Step 5

Pour the sweet and sour sauce mixture evenly over the ingredients in the crock pot.

Step 6

Cover the crock pot with the lid and cook on low for 6-7 hours or on high for 3-4 hours, or until the pork chops are tender and thoroughly cooked.

Step 7

About 20 minutes before serving, whisk together the cornstarch and cold water in a small bowl. Add the mixture to the crock pot and gently stir. This will thicken the sauce.

Step 8

Replace the lid and continue cooking for the remaining 20 minutes until the sauce has thickened.

Step 9

Serve the sweet and sour pork chops over cooked white or brown rice, if desired. Spoon the thickened sauce, bell peppers, and pineapple chunks over the top for a complete meal.
