Ingredients

  • 10 cups Unsliced bread (white or whole grain, slightly stale)
  • 0.5 cups Unsalted butter
  • 1 large Yellow onion, finely diced
  • 3 stalks Celery, finely diced
  • 1 medium Carrot, grated
  • 3 cloves Garlic, minced
  • 1 tablespoon Poultry seasoning
  • 1 teaspoon Dried sage
  • 1 teaspoon Dried thyme
  • 2.5 cups Chicken or vegetable broth
  • 2 large Eggs, lightly beaten
  • 0.25 cups Fresh parsley, chopped
  • 1 teaspoon Salt
  • 0.5 teaspoons Black pepper
  • 1 as needed Cooking spray (for crock pot)

Directions

Step 1

Cut the bread into 1-inch cubes and spread them out on a baking sheet. Let them sit uncovered overnight to dry out, or bake them in a 300°F (150°C) oven for 15 minutes until lightly toasted. Set aside to cool.

Step 2

In a large skillet over medium heat, melt the butter. Add the diced onion, celery, carrot, and minced garlic. Cook for 5-7 minutes until the vegetables are soft and fragrant.

Step 3

Transfer the vegetable mixture to a large mixing bowl. Add the cubed bread, poultry seasoning, sage, thyme, salt, and black pepper. Toss until evenly combined.

Step 4

In a separate bowl, whisk together the chicken or vegetable broth and eggs. Pour this mixture over the bread and vegetables, stirring gently to coat the bread evenly. The bread should be moist but not soggy. If needed, add a bit more broth.

Step 5

Spray the crock pot insert with cooking spray to prevent sticking. Transfer the stuffing mixture into the crock pot and press it down gently to create an even layer.

Step 6

Cover and cook on LOW for 4 hours, or until the stuffing is heated through and the top is slightly crisp.

Step 7

Once done, sprinkle the fresh parsley over the stuffing for garnish and additional flavor.

Step 8

Serve warm as a side dish or alongside your favorite main course. Enjoy!
