  • 2 tablespoons Olive oil
  • 1.5 cups Beef broth
  • 2 tablespoons Tomato paste
  • 1 medium Onion, finely chopped
  • 2 medium Carrots, chopped
  • 2 stalks Celery, chopped

Directions

Step 1

Lay the flank steak flat on a cutting board and, if necessary, pound with a meat mallet to ensure even thickness.

Step 2

In a bowl, mix together the bread crumbs, Parmesan cheese, parsley, minced garlic, salt, pepper, and 1 tablespoon of olive oil to create the stuffing.

Spread an even layer of stuffing over the surface of the steak.
