Ingredients

  • 2 pounds Beef stew meat
  • 1.5 pounds Pearl onions
  • 3 tablespoons Olive oil
  • 4 whole Garlic cloves
  • 2 tablespoons Tomato paste
  • 1 cup Red wine
  • 1 cup Beef broth
  • 2 tablespoons Red wine vinegar
  • 1 whole Cinnamon stick
  • 2 whole Bay leaves
  • 5 whole Allspice berries
  • 0.25 teaspoons Ground cloves
  • 1 cup Crushed tomatoes
  • 1.5 teaspoons Salt
  • 1 teaspoon Black pepper
  • 2 tablespoons Fresh parsley (optional, for garnish)

Directions

Step 1

In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Add the beef stew meat in batches and sear until golden brown on all sides. Transfer the browned beef to the crock pot.

Step 2

In the same skillet, add the remaining tablespoon of olive oil. Add the pearl onions and cook for 5-7 minutes until lightly browned, then add the garlic cloves and cook for another 1-2 minutes. Transfer the onions and garlic to the crock pot.

Step 3

In a small bowl, whisk together the tomato paste, red wine, beef broth, and red wine vinegar until well combined. Pour this mixture over the beef and onions in the crock pot.

Step 4

Add the cinnamon stick, bay leaves, allspice berries, ground cloves, crushed tomatoes, salt, and black pepper to the crock pot. Stir gently to combine all the ingredients.

Step 5

Cover and cook on LOW for 7 hours or HIGH for 4 hours, until the beef is tender and the flavors are fully developed.

Step 6

Before serving, remove the cinnamon stick, bay leaves, and allspice berries. Adjust salt and pepper to taste, if needed.

Serve the stifado hot, garnished with fresh parsley if desired. It pairs beautifully with crusty bread, rice, or mashed potatoes.
