  • 1 pound Ground beef
  • 1 medium Yellow onion, diced
  • 2 cloves Garlic, minced
  • 15 ounces Red enchilada sauce
  • 4 ounces Green chilies, diced
  • 6 pieces Flour tortillas (medium, 8-inch)
  • 2 cups Mexican blend cheese, shredded
  • 1 cup Black beans, drained and rinsed
  • 2 tablespoons Fresh cilantro, chopped
  • 1 tablespoon Vegetable oil (for cooking)

Directions

Step 1

Heat the vegetable oil in a skillet over medium heat. Add the ground beef and cook until browned, breaking it into crumbles, about 6-8 minutes.

Step 2

Add the diced onion and minced garlic to the skillet. Cook for another 3-4 minutes, until the onion is translucent and fragrant.

Drain any excess grease from the skillet. Stir in half of the enchilada sauce and the diced green chilies. Season with salt and pepper, then remove from heat.

In the bottom of the crock pot, spread a small amount of enchilada sauce to prevent sticking.
