Ingredients

  • 6 pieces Boneless, skinless chicken thighs
  • 0.5 cup Creamy peanut butter
  • 1 cup Coconut milk
  • 0.25 cup Soy sauce
  • 2 tablespoons Honey
  • 2 tablespoons Sriracha sauce
  • 3 cloves Garlic cloves, minced
  • 1 tablespoon Fresh ginger, grated
  • 1 tablespoon Rice vinegar
  • 1 tablespoon Lime juice
  • 0.5 teaspoon Red pepper flakes
  • 0.25 cup Chopped peanuts
  • 2 tablespoons Chopped fresh cilantro
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper

Directions

Step 1

Place the boneless, skinless chicken thighs in the bottom of your crock pot in a single layer.

Step 2

In a medium-sized mixing bowl, whisk together the peanut butter, coconut milk, soy sauce, honey, sriracha sauce, minced garlic, grated ginger, rice vinegar, lime juice, red pepper flakes, salt, and black pepper until smooth and well combined.

Step 3

Pour the peanut sauce evenly over the chicken thighs in the crock pot.

Step 4

Cover the crock pot with the lid and cook on low for 4-5 hours or on high for 2-3 hours, until the chicken is fully cooked and tender.

Step 5

Once cooked, carefully remove the chicken from the crock pot and set it aside on a plate.

Step 6

If desired, transfer the peanut sauce from the crock pot to a saucepan and simmer it over medium heat for 5-10 minutes to thicken slightly.

Step 7

Serve the chicken over cooked white rice, brown rice, or noodles, and drizzle generously with the spicy peanut sauce.

Step 8

Garnish with chopped peanuts and fresh cilantro before serving.

Step 9

Optional: Add a lime wedge on the side for an extra burst of lime flavor.
