Ingredients

  • 4 pieces lamb shanks
  • 2 tablespoons olive oil

  • 14 ounces diced tomatoes (with juices)
  • 1 cup chicken or beef broth

  • 1.5 teaspoons ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon smoked paprika
  • 0.5 teaspoon red pepper flakes
  • 1 stick cinnamon stick
  • 2 leaves bay leaves
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons fresh cilantro or parsley for garnish

Directions

Step 1

Heat the olive oil in a large skillet over medium-high heat.

Step 2

Season the lamb shanks with salt and black pepper. Sear each lamb shank for 2-3 minutes per side until browned. Set aside.

In the same skillet, sauté the diced onion until softened, about 5 minutes. Add the minced garlic and cook for 1 more minute until fragrant.
