Ingredients

  • 2 cups Long-grain white rice
  • 3 cups Chicken broth
  • 1 cup Tomato sauce
  • 1 14.5-ounce can Diced tomatoes
  • 1 medium Onion, finely chopped
  • 1 medium Green bell pepper, finely chopped
  • 2 cloves Garlic cloves, minced
  • 2 tablespoons Olive oil
  • 2 teaspoons Chili powder
  • 1 teaspoon Cumin
  • 1 teaspoon Paprika
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 cup Frozen peas (optional)
  • 0.25 cup Fresh cilantro, chopped (optional for garnish)

Directions

Step 1

Rinse the long-grain white rice under cold water until the water runs clear, then set it aside to drain.

Step 2

In a skillet over medium heat, add the olive oil. Once heated, sauté the chopped onion and green bell pepper for 3-5 minutes or until softened.

Add the minced garlic to the skillet and cook for an additional minute, stirring constantly to prevent burning.

Transfer the sautéed mixture to the crock pot.
