Ingredients

  • 4 pieces Boneless pork chops
  • 2 tablespoons Olive oil
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 teaspoon Cumin
  • 1 teaspoon Smoked paprika
  • 1 teaspoon Chili powder
  • 1 tablespoon Minced garlic
  • 14.5 ounces Diced tomatoes with green chilies (canned)
  • 15 ounces Black beans (canned, drained and rinsed)
  • 1 cup Frozen corn kernels
  • 1 cup Chicken broth
  • 2 tablespoons Lime juice
  • 2 tablespoons Fresh cilantro (chopped)

Directions

Step 1

Season the pork chops with salt, black pepper, cumin, smoked paprika, and chili powder on both sides.

Step 2

Heat olive oil in a skillet over medium-high heat. Sear the pork chops for 2-3 minutes on each side until lightly browned. Remove from heat and set aside.

Step 3

In the bottom of your crock pot, add the minced garlic, diced tomatoes with green chilies, black beans, frozen corn, and chicken broth. Stir gently to combine.

Step 4

Place the seared pork chops on top of the vegetable mixture in the crock pot.

Cover and cook on low heat for 6 hours, or until the pork chops are tender and cooked through.
