Ingredients

  • 4 pieces Boneless, skinless chicken breasts
  • 15 ounces Black beans (drained and rinsed)
  • 1 cup Corn (frozen or canned, drained)
  • 10 ounces Diced tomatoes with green chilies
  • 1 medium Onion (diced)
  • 3 cloves Garlic (minced)
  • 1 cup Chicken broth
  • 2 teaspoons Chili powder
  • 1 teaspoon Ground cumin
  • 1 teaspoon Paprika
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.25 cup Fresh cilantro (chopped, for garnish)
  • 0.5 cup Shredded cheddar cheese (optional, for serving)
  • 0.5 cup Sour cream (optional, for serving)

Directions

Step 1

Place the chicken breasts into the bottom of the crock pot.

Step 2

Add the black beans, corn, diced tomatoes with green chilies, onion, and garlic on top of the chicken.

Step 3

Pour the chicken broth over the ingredients to ensure everything is moist.

Step 4

Sprinkle the chili powder, ground cumin, paprika, salt, and black pepper evenly over the mixture.

Step 5

Stir gently to combine the spices with the vegetables and beans without disturbing the chicken breasts too much.

Step 6

Cover the crock pot with the lid and cook on low heat for 6-7 hours or on high heat for 3-4 hours, until the chicken is fully cooked and tender.

Step 7

Once cooked, remove the chicken breasts and shred them with two forks. Return the shredded chicken to the crock pot and mix it into the sauce.

Step 8

Taste and adjust seasoning if necessary. Serve hot, garnished with chopped fresh cilantro, shredded cheddar cheese, and a dollop of sour cream, if desired.
