Ingredients

  • 4 pieces Boneless, skinless chicken breasts
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 1 teaspoon Garlic powder
  • 1 teaspoon Paprika
  • 1 tablespoon Olive oil
  • 8 ounces Fresh mushrooms, sliced
  • 1 medium Yellow onion, thinly sliced
  • 3 cloves Garlic, minced
  • 1 cup Chicken broth
  • 10.5 ounces Cream of mushroom soup
  • 0.5 cup Sour cream
  • 2 sprigs Fresh thyme (optional, for garnish)

Directions

Step 1

Season the chicken breasts with salt, black pepper, garlic powder, and paprika on both sides.

Step 2

In a large skillet, heat the olive oil over medium-high heat. Sear the chicken breasts for 2-3 minutes on each side until golden brown. Remove from the skillet and set aside.

Step 3

In the same skillet, add the sliced mushrooms and cook for 3-4 minutes until softened. Stir in the sliced onion and minced garlic, cooking for another 2-3 minutes until fragrant. Transfer the mixture to the crock pot.

Step 4

Place the seared chicken breasts on top of the mushroom mixture in the crock pot.

Step 5

In a medium bowl, whisk together the chicken broth, cream of mushroom soup, and sour cream until smooth. Pour this mixture over the chicken and mushrooms in the crock pot.

Step 6

Cover the crock pot and cook on high for 4 hours or on low for 6-7 hours, until the chicken is tender and fully cooked.

Step 7

Once finished, taste the sauce and adjust seasoning if needed. Serve the smothered chicken hot, garnished with fresh thyme if desired.
