Ingredients

  • 16 oz smoked sausage
  • 24 oz sauerkraut
  • 1 large yellow onion
  • 1 large apple
  • 1 cup chicken broth
  • 1 tablespoon brown sugar
  • 1 teaspoon caraway seeds (optional)
  • 0.5 teaspoon black pepper
  • 1 tablespoon butter

Directions

Step 1

Slice the smoked sausage into 1/2-inch pieces and set aside.

Step 2

Rinse the sauerkraut under cold water if you prefer a milder tang. Drain thoroughly.

Step 3

Peel and thinly slice the yellow onion. Core and thinly slice the apple.

Step 4

In a skillet over medium heat, melt the butter. Add the sliced onion and sauté for 3-4 minutes until softened.

Step 5

Place the sauerkraut in the bottom of your crock pot. Spread the sautéed onions and sliced apples over the sauerkraut.

Step 6

Add the smoked sausage on top of the onion and apple mixture.

Step 7

In a mixing bowl, combine the chicken broth, brown sugar, caraway seeds (if using), and black pepper. Stir to mix and then pour the liquid evenly over the contents in the crock pot.

Step 8

Cover the crock pot and cook on low for 4-5 hours, or on high for 2-3 hours, until everything is heated through and flavors are well combined.

Step 9

Stir gently before serving and adjust seasoning if necessary. Serve warm as a main dish alongside mashed potatoes, crusty bread, or even over egg noodles.
