Ingredients

  • 2 pounds Beef sirloin or flank steak
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 1 teaspoon Garlic powder
  • 2 tablespoons All-purpose flour
  • 2 tablespoons Olive oil
  • 1 large Yellow onion
  • 8 ounces Cremini or button mushrooms
  • 2 cups Beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon Soy sauce
  • 1 tablespoon Cornstarch
  • 2 tablespoons Water
  • 2 tablespoons Fresh parsley (optional, for garnish)

Directions

Step 1

Slice the beef into thin strips, about 1/4-inch wide. Season with salt, black pepper, and garlic powder. Toss with the flour to lightly coat the beef.

Step 2

Heat a large skillet over medium-high heat and add olive oil. Sear the beef strips in batches until browned on all sides, about 1-2 minutes per side. Transfer the browned beef to the slow cooker.

Step 3

Thinly slice the yellow onion and mushrooms. Add them to the slow cooker on top of the beef.

Step 4

In a bowl, whisk together the beef broth, Worcestershire sauce, and soy sauce. Pour the mixture over the beef and vegetables in the slow cooker.

Step 5

Cover the slow cooker with the lid and set it to cook on LOW for 6-7 hours or HIGH for 3-4 hours. The beef should be tender, and the flavors should be well combined.

Step 6

About 20 minutes before serving, mix the cornstarch with water in a small bowl to create a slurry. Stir the slurry into the slow cooker to thicken the gravy. Cook for an additional 15-20 minutes on HIGH until the gravy thickens.

Step 7

Taste and adjust seasoning, if necessary. Garnish with fresh parsley before serving, if desired.

Step 8

Serve over mashed potatoes, rice, or buttered egg noodles for a hearty and delicious meal.
