  • 3 lbs Chuck roast
  • 1 cup Beef broth
  • 1 medium Yellow onion
  • 4 Garlic cloves
  • 1 15-oz can Canned diced tomatoes
  • 2 tsp Chili powder
  • 1 tsp Ground cumin
  • 1 tsp Paprika
  • 1.5 tsp Salt
  • 1 tsp Black pepper
  • 2 tbsp Olive oil
  • 2 tbsp Fresh cilantro (optional, for garnish)

Directions

Step 1

Trim excess fat from the chuck roast, if needed.

Step 2

Season the beef on all sides with salt and pepper.

Step 3

Heat olive oil in a large skillet over medium-high heat.

Step 4

Sear the chuck roast on all sides until browned, about 2-3 minutes per side. Transfer the roast to the crock pot.

Peel and thinly slice the onion. Add it to the crock pot, scattering around the beef.
