Ingredients

  • 1 pound ground beef or ground lamb
  • 1 medium yellow onion, diced
  • 2 medium carrots, diced
  • 1 cup frozen peas
  • 2 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1 cup beef broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 4 medium russet potatoes, peeled and chopped
  • 4 tablespoons butter
  • 0.5 cup milk
  • 1 cup shredded cheddar cheese (optional)
  • 1 small amount cooking spray or oil

Directions

Step 1

Heat a large skillet over medium-high heat and add the ground beef or lamb. Cook until browned, breaking the meat apart with a wooden spoon, about 5-7 minutes. Drain excess fat if necessary.

Step 2

Add the diced onion, carrots, and minced garlic to the skillet. Cook for another 3-4 minutes, or until the vegetables soften slightly.

Step 3

Stir in the tomato paste, Worcestershire sauce, beef broth, dried thyme, dried rosemary, salt, and black pepper. Let the mixture simmer for 2-3 minutes, then remove from heat.

Step 4

Spray the crock pot with cooking spray or lightly grease with oil to prevent sticking.

Step 5

Transfer the meat and vegetable mixture to the bottom of the crock pot, spreading it out evenly.

Step 6

Layer the frozen peas evenly over the meat and vegetable mixture.

Step 7

Place the peeled and chopped potatoes in a large pot and cover with water. Bring to a boil over high heat, then reduce to a simmer and cook until the potatoes are tender, about 10-12 minutes.

Step 8

Drain the potatoes and return them to the pot. Add the butter and milk, then mash until smooth. Season with salt and pepper to taste.

Step 9

Spread the mashed potatoes evenly over the meat and vegetable layers in the crock pot. Smooth the top with a spatula.

Step 10

If using, sprinkle the shredded cheddar cheese over the mashed potato layer.

Step 11

Cover the crock pot with a lid and cook on low heat for 4 hours or on high heat for 2 hours, until heated through and the flavors meld together.

Step 12

Serve hot and enjoy this comforting, easy-to-make Crock Pot Shepherd's Pie!
